THIS WINTER THE SPOTLIGHT VEGGIE IS…ROMAINE LETTUCE!!
Lettuce has been a huge part of my diet since I was a little kid. I mainly eat lettuce in salads. Salad is always a go to meal and is something that can always be changed up, therefore, I never ever get bored. One of my favorite salads consists of romaine lettuce, shredded (light) parmesan cheese, and sliced almonds.
Romaine lettuce is an excellent source of:
- fiber
- magnesium
- potassium
- copper
- iron
- vitamin C.
