SPOTLIGHT VEGGIE: Fall ’17

THIS FALL, THE SPOTLIGHT VEGETABLE IS BROCCOLINI!

I have been eating broccolini almost every night for dinner and sometimes for lunch! There are so many amazing ways to prepare it and it tastes so amazing. One of my favorite ways is to marinade it in lemon juice, salt, and pepper and then char them on a griddle.

Broccolini is good for you because . . .

  • It is a rich source of Vitamin A, Vitamin C, and Vitamin K
  • Contains calcium, folate, and iron
  • Contains antioxidants
  • Fat free, sodium free, and cholesterol free
  • Contains lots of FIBER!!
  • Fiber is important to fight things like obesity and diabetes
