What’s Cookin’ This Fall

With the holidays approaching, many are gearing up to fix the perfect meal. Holiday season brings excuses for more cheat days and less gym days, however, cauliflower mash is just one substitute for your favorite guilty pleasure, mashed potatoes. This is the perfect dupe for mashed potatoes, with less calories, but never less flavor or creaminess. Let me know how this turned out for you! Share a photo and tag us!! Xx

Ingredients 

  • 1/2 cup of almond milk 

Instructions: 

  1. Set a stockpot of water to boil over high heat.
  2. Clean and cut cauliflower into small pieces.
  3. Cook in boiling water for about 6 minutes, or until well done.
  4. Drain well
  5. Dry well with paper towels, do not let cool.
  6. In a blender, puree the hot cauliflower with the almond milk, Parmesan, garlic, salt, and pepper until almost smooth.
  7. Serving options
     
    1. Butter 
    2. Chives 
    3. Sour cream
